Hosting friends and close acquaintances for a dinner party can take shape in many different ways. But, here in the South, a number of dinner parties are filled with quaint traditions and customs. In late March, Charleston area blogger extraordinaire, Michel Perry, founder of the popular website, Black Southern Belle, invited Pink Verbena and a host of other content creators to her “Southern Tastemaker’s Affair” dinner party. This event was hosted by the renown Charleston area caterers, Hamby Catering & Events. An event like no other we’ve ever attended, this gathering of Southern tastemakers left a warm and profound impression on us all. Situated in the Market at Hamby Catering, the Hamby team did an exceptional job capturing the soul of the South with their awe inspiring tablescapes. A bit of a nod to the past, the gilded flatware and stemware provided a classic touch. We were also able to take a peek at the prepared dinner options on display within the Market. Upon arriving, we learned that our four course meal was being prepared by none other than the esteemed Chef John Brunski. Chef Brunski has over two decades of culinary excellence under his belt.ScreenHamby1

His eye for detail was evident in his meticulous preparation of our fish course, Timbale of Crab with purple and golden cauliflower.ScreenHamby2As delicious as they were beautiful, Chef Brunski’s dishes are also prepared with sustainability in mind. Using locally sourced ingredients, he was able to summon the traditions of Lowcountry cuisine. The following course, our entrée, was Crispy Manchester Farms Quail. Our quail was dressed with sage and pecan cracking cornbread along with Southern braised Swiss chard and port wine reduction.Quail2

Our dessert was, of course, our favorite. Chef Brunski prepared an out-of-this-world, lighter than air Cheesecake Mousse served on a benne wafer crust with a raspberry puree. It was sensational!DessertRaspberry2Raspberry1
